Its easy to make and yet so tasty :)<br />
<br />
You need:<br />
200 gr shareya/vermicelli<br />
1 Tablespoon butter<br />
1/2 liter milk<br />
sugar<br />
1-2 tablespoon rosewater<br />
<br />
1. In a medium sauce pan melt the butter.<br />
Add the shareya and let them get slightly brown.<br />
<br />
2. Add the milk and let it simmer til the shareya is well cooked.<br />
<br />
Than add the sugar (about half cup, depends how sweet you want it to be) and the Rose Water.<br />
Mix well and serve warm or chilled.<br />
<br />
You can add Raisind as well as cinnamon or Cardamom or Nuts.<br />

1 tablespoon vinegar<br />

<strong>How to prepare it:</strong><br />

1. Peel the carrots, potato and the onion and chop.<br />

Wash the zucchini and chop too.<br />
<br />
<br />
2. In a medium sized bowl, heat 1 Liter of water and add the broth cube.<br />
<br />
When the water is cooking add the vermicelli and the spices.<br />
<br />
Ad the vegetables and stir so the vermicelli wont stick together.<br />
<br />
<br />
3. Add the vinegar and let the soup cook for a few minutes ( 3-5 min).<br />
<br />
Now turn the heat down a bit and let the soup simmer for about 20 min.<br />
<br />
The soup is ready when the carrot is soft.<br />

We serve this soup with rice but it tastes just as good with bread.<br />

<strong>You need:</strong><br />
<br />
400 gr uncooked pasta<br />
<br />
4 Tablespoon Butter<br />
<br />
Some oil<br />
<br />
400 gr minced beef<br />
<br />
1 onion<br />
<br />
2 garlic cloves<br />
<br />
1 teaspoon cumin<br />
<br />
Salt/Pepper<br />
<br />
2 Tablespoon flour<br />
<br />
1 glass Milk<br />
<br />
1 cube vegetable broth<br />
<br />
<strong>How to prepare it :</strong><br />
<br />
1. First bring water to boil and cook the pasta till its soft ( about 10 min)<br />
<br />
Drain, mix it with 1 Tablespoon Butter and set aside.<br />
<br />
2. Peel and chop the onion and the garlic. <br />
<br />
Mix the minced beef with pepper, salt and cumin.<br />
<br />
In a medium sized frying pan melt 1 Tablespoon butter and add 1-2 Tablespoon oil.<br />
<br />
Add the onion/garlic and fry for 1-2 min.<br />
<br />
Now add the beef and fry till the beef turns throughout brown.<br />
<br />
Set aside.<br />
<br />
3. In a small bowl, melt 2 Tablespoon Butter.<br />
<br />
Than add the Fluor and mix well.<br />
<br />
Add a little of the milk and mix. <br />
<br />
It should get thick, at that point add more milk and stir. Proceed until you used all the milk.<br />
<br />
Let the mix get thick and add about ½ glass of water. Mix and stir till it starts to thicken.<br />
<br />
Set aside.<br />
<br />
4. Grease a heat proved pan and put the fried beef in it.<br />
<br />
Above the meat put the pasta.<br />
<br />
Than pour the sauce over it. Make sure all of it is covered well in the sauce.<br />
<br />
Put it in the oven till the top starts to slightly turn brown.<br />
<br />
Use a temperature between 150- 180 C.<br />

<em><u>How to prepare them:</u></em><br />

1. Mix the Fluor, Sugar, Egg, Milk and Cinnamon with a hand-mixer in a plastic bowl until the mixture becomes smooth.<br />
It shouldnt be too thick so if its not runny than add some more milk or water.<br />
<br />
2. Peel the banana and mash it. Add the mashed Banana and the chocolate chips to the pancake mix and carefully stirr it in.<br />
<br />
3. Heat 2 Tablespoons of oil in a small frying pan on medium heat.<br />
When its hot add some of the pancake mix. You can decide yourself if you want the pancakes bigger or smaller.<br />
<br />
4. When you move the frying pan and the pancake moves than you can turn the pancake around.<br />
Let it get brown on both sides and put aside.<br />
<br />
5. Repeat this with the rest of the pancake mix. Always add 1 Tbalespoon oil when you start a new pancake.<br />

2 carrots<br />

1 onion<br />

1 cube vegetable broth<br />

1 teaspoon coriander powder<br />

½ cup Milk or cream<br />

1. Peel the Carrots and Onion. Chop them.<br />

Cut the pumpkin into big pieces ( Tablespoon size)<br />

2. Melt the butter in a big bowl on medium heat.<br />

Add the pumpkin, onion and carrot´s.<br />

Leave for a few minutes and stirr a few times during this.</span><br />

3. Add 2 cups of water and the broth cube.<br />

Add the spices and mix well.<br />

Cover and let it simmer on medium heat for 20 minutes.<br />

I love baked sweet potatoes and its great that they are not only tasty but also very healthy.<br />
<br />
My problem is that I hate to make them in the oven. It simply takes too long to pre heat the oven and than bake them.<br />
<br />
So I found a way that is faster and easier than this.<br />
<br />
I simply use the microwave to bake my potatoes. Alright you cant call it baked anymore I guess but the taste is the same.<br />
<br />
This is how you do it:<br />
<br />
1. Wash the sweet potato and then dry it with a kitchen towel.<br />
<br />
2. Pick the potato with a fork many times. You don’t need to push the fork too deep into it but just make sure there are some little wholes.<br />
<br />
3. Put the potato on a plate and place it in the microwave.<br />
<br />
Turn the microwave on full heat ( if you use medium or low heat it will take a long time)<br />
<br />
Set the timer for 5 min.<br />
<br />
After this time use a knife to check if the potato is ready.<br />
<br />
If you can push the knife through the potato ( middle) than its soft and ready to eat.<br />
<br />
If its still hard than put it in the microwave for another 5 min and check again.<br />
<br />
I eat the potato without adding anything but I know most people love to add some butter on top or to add some salt. Choose your favorite variation and enjoy a sweet potato snack <span style="font-family: Wingdings;">J</span>

Cheesecake with Sour cream<br />
<br />
Crust:<br />
<br />
1 package of biscuits ( 200gr, any kind you like will do)<br />
<br />
1 stick of butter<br />
<br />
2 tablespoon sugar ( put more if you want it more sweet)<br />
<br />
¼ teaspoon cinnamon ( optional)<br />
<br />
Filling:<br />
<br />
500 grams cream cheese ( in Egypt I use Kiri cheese or Ishta/cream cheese, use a cheese with no added salt if possible)<br />
<br />
300 grams sour cream<br />
<br />
2 eggs<br />
<br />
1 cup sugar<br />
<br />
Vanilla<br />
<br />
Lemon zest<br />
<br />
1. Turn on the oven to 180 degree Celsius.<br />
<br />
2. Ground the biscuits until there are no more big pieces.<br />
<br />
Add the sugar and cinnamon to the grounded biscuits<br />
<br />
Melt the butter and mix it with the biscuits. <br />
<br />
Put in the fridge for 5 min.<br />
<br />
3. Meanwhile put the cream cheese in a bowl and beat until it becomes soft.<br />
<br />
Add the sour cream, sugar, vanilla and lemon zest.<br />
<br />
Now add the eggs one by one.<br />
<br />
Mix well.<br />
<br />
4. Pour the filling onto the refrigerated crust.<br />
<br />
Put it in the oven.<br />
<br />
5. Let the cheesecake bake for 55 min.<br />
<br />
After this time check the cheesecake with a knife.<br />
<br />
Nothing should stick to knife ( check the centre of the cheesecake)<br />
<br />
If cake sticks to the knife than leave the cheese cake in the oven for some more and check it every 5-10 min.<br />
<br />
If you recognize that the cheesecake is thoroughly baked than turn of the oven and open it a little bit. Leave the cheesecake to cool for 1 hour.<br />
<br />
After that refrigerate the cake for minimum 4 hours. <br />
<br />
It tastes much better after it been in the cooled in the fridge.<br />
<br />
You can serve the cheesecake with any topping you like but its also tasty enough without any topping at all. We love to eat this cake without anything for breakfast on special occasions <span style="font-family: Wingdings;">J</span>

If you want to make a different kind of cheesecake you can add chocolate.<br />
<br />
Just melt 300 grams of chocolate and add it to the filling mix.<br />
<br />
I love to add some coffee to the filling. For that I use ¼ cup of strong coffee or espresso.<br />

2 tablespoon oil ( might be more- any oil will do, except olive oil as its not good for frying!)<br />

3 carrots<br />

2 zucchini<br />

1 potato<br />

1 onion<br />

1 cup lentils<br />
<br />
2.5 cups water<br />
<br />
2 tablespoon tomato paste<br />
<br />
How to prepare it:<br />
<br />
1. Wash the lentils.<br />
<br />
You can whether put them in a sieve and flush them or you can put them in a plastic bowl and add water, than stir them and remove the water ( you will have to do this a few times till the water comes out clean).<br />
<br />
Now put the lentils with 2.5 cups of water and 2 tablespoon of tomato paste in a bowl and bring to boil.<br />
<br />
2. While the lentils simmer on the fire you can peel and clean the vegetables.<br />
Peel the potato and the carrots. Clean the zucchini.<br />
Cut all vegetables into small cubes.<br />
Peel the onion and chop it.<br />
<br />
3. Use a big frying pan or a bowl. Insert the oil and heat.<br />
Add the spices and leave for ½ minute. Take care that it doesn’t burn! <br />
Keep on low heat/fire.<br />
Now add the vegetables and stir well so that the vegetables are all covered in the spices.<br />
Leave for 2-3 minutes and stir several times during this period.<br />
<br />
4. Now add the lentils (including the water) to the vegetables.<br />
Add some water if its too dry.<br />
It shouldn’t swim in water but you should be able to stir the mix easily without anything sticking to the ground!.<br />
<br />
5. Let the mix simmer on low fire until the carrots are tender.<br />
The time varies but it shouldn’t take more than 20 minutes! Most probably less than 20 minutes. Keep an eye on the vegetables and turn of the heat when the carrots are tender.<br />
<br />
<br />
This dish fits well to basmati rice, spice rice or simple Indian/ Arabic bread.<br />
Another nice addition to this dish is yogurt.<br />

Karkady is a typical egyptian drink but it can be found in other countrys too under the name hibiscus tea. You can drink it hot as a tea in winter or you can drink it cold in summer.</div>

To make rice the Egyptian way is an art and its hard to find out how to create it perfectly.<br />
Egyptians take their rice pretty serious and every young woman will have to learn how to make Egyptian rice before she get married. It took me quite a while to figure out how to do it.<br />
I took some advices from my sister in law and mother in law in order to perfection it.<br />
<br />
What you need:<br />
<br />
1,5 cups Egyptian rice <br />
<br />
¼ cup shareya / vermicelli<br />
<br />
3 tablespoon oil<br />
<br />
1 teaspoon Butter<br />
<br />
½ Teaspoon salt <br />
<br />
1 cube vegetable broth ( that’s optional, some Egyptians use it and some don’t, traditionally its not used)<br />
<br />
How to make Egyptian Rice:<br />
<br />
1. Heat the oil in a medium sized bowl.<br />
Insert the Shareya/vermicelli and let it fry for 1 minute. It should get a bit brown but not too dark!.</span><br />

<br />2. Now add the rice and mix it well with the shareya/vermicelli.<br />
Leave it on the fire for 3-5 minutes. The fire should be medium heat.<br />
<br />
3. Meanwhile boil 3 cups of water. You can use a water boiler or do it on the stove if you don’t have a water boiler. Important is that the water is boiling hot when adding it to the rice!<br />
<br />
4. Add the salt to the rice.<br />
Now add the 3 cups of water andthe butter to the rice. Be careful as the water might splash up a little.<br />
Stir a few time ( add the broth now, if desired).<br />
<br />
5. Cover the bowl and turn the stove on to low fire. <br />
Leave it for about 20 - 25 minutes. Don’t uncover it or remove the cover.<br />
After 20 - 25 minutes turn off the heat and leave the cover on the bowl.<br />
Leave the rice covered for another 10 -20 minutes than its ready to serve.<br />
<br />
The secret is to add boiling water to the rice, if you use cold water the rice will get sticky. Same will happen if you stir the rice while cooking. Its important to only stir the rice a few time after adding the water and after that to leave it to itself!<br />
<br />
Of course you can make the rice without shareya too. You wont have to change anything to make it without the shareya.<br />
<br />
It might be a little difficult to get Egyptian Rice if you don’t live in Egypt , but you might find it online.<br />
<br />
If there’s no way to find it than you can use round grain rice from your local store, but it wont taste exactly the same like the Egyptian one.<br />

1 bag of frozen carrot-pea mix ( about 500gr)<br />

2 Carrots<br />
<br />
1 Onion<br />

3 Tablespoon oil<br />

½ cup Milk<br />

1 tablespoon curry<br />

½ teaspoon black seeds<br />
<br />
½ teaspoon cumin seeds<br />

1/2teaspoon curcuma (optional)<br />
<br />
½ teaspoon salt and pepper (more or less as desired)<br />
<br />
1 cube vegetable broth<br />
<br />
<br />
<br />
1. Peel and chop the carrots and onion.<br />
<br />
2. Heat the oil in a bowl and add the spices. Leave for ½ minute and than add the vegetables ( also the frozen ones).<br />
<br />
3. Mix the vegetables well with the spices, cover and let simmer for 5 minutes on low fire. Take care that it doesn’t burn!<br />
<br />
4. Add the milk and mix well. Cover again and let it simmer until the carrots are tender.<br />
It takes about 10 min, but can be more or less, so you have to keep an eye on it!<br />
<br />
Serve with rice.<br />

2 tablespoon butter<br />
1/2 teaspoon olive oil<br />
1/2 hand full of parsley<br />

paprika powder<br />
salt/pepper<br />
sweet soya sauce/ optional<br />

Chop the onion, carrot,bell pepper into small pieces.<br />
Melt the butter in frying pan and add the olive oil (so the butter wont burn!). Add onion, carrot and the bell pepper and turn the heat very low. Cover the frying pan and let it simmer for about 15-20min.<br />
Set aside.<br />

Chop the tomatoes and put them in a small bowl. Add 1 cup of water and put it on the fire (medium heat). Chop the zucchini and add it to the tomatoes. chop the garlic cloves and add them too.<br />
Add tomato paste and mushrooms.Now add the spices ( 1 teaspoon pepper, 2 teaspoon paprika powder, salt). Optional also add 1/2 teaspoon of sweet soya sauce. Stir and let it simmer for about 10 min. If its gets too thick add more water. If it is too fluid than let it simmer a little longer.It should have the texture of pasta sauce.<br />
Chop the parsley and add it.<br />
<br />
When the tomato sauce has the right texture turn off the fire an add the other vegetables.<br />
<br />
Generously oil the bottom of a 10-by-18-inch baking dish.Cover the bottom of the pan with lasagna noodles.<br />
Spread sauce over noodles.<br />
Repeat layers until pan is full.<br />
Top with remaining sauce and cheese.<br />
<br />
Bake at 180C for 20-25min.<br />
Let it cool for about 10 min before serving.<br />

Italian Sauce Bolognaise<br />
<br />
What you need to make the sauce Bolognaise:<br />
<br />
1 kg mined beef<br />
5 garlic cloves, chopped<br />
3 carrots chopped <br />
2 onions chopped<br />
800 gr tomatoes ( or use 1,5 cans of tomatoes. 1 can = 400gr )<br />
125gr butter<br />
2 chilis ( optional)<br />
salt<br />
pepper<br />
2 Tablespoons vinegar<br />
1 Teaspoons Sugar<br />
1.5 cubes vegetable broth (or chicken broth)<br />
some olive oil<br />
<br />
How to make it:<br />
<br />
1. Chop the Carrots, Onions and the celery as small as possible. <br />
Most important part of the Bolognaise is the Soffritto.<br />
For that melt the Butter in a frying pan and add a some Olive oil (1-2 Tablespoon). Than add the chopped carrots, onions and celery.<br />
Let it simmer on low heat for at least 30 min. Take care it doesnt get too hot so it wont fry.<br />
<br />
2. Chop the toamtoes and put aside. I used 1 kg tomatoes and 3 tablespoons of Tomato paste.<br />
<br />
3. Now fry the minced meat in another frying pan until it changes its colour to slightly brown. Than transfer it to a big bowl and add 1/2 litre of water, the broth cubes and the vinegar. As soon as it starts to cook add the chopped tomatoes and the sugar.<br />
<br />
4. When this starts to cook add the Soffritto and the chopped garlic and chopped chilis.<br />
Let this cook for at least 2 Hours, better would be 5 hours or more.<br />
After this add salt and pepper.<br />
<br />
The Bolognaise doesnt need any other spices, u will see :)<br />
<br />
The pieces in the picture are mushrooms. <br />The Paste is made out of Apricot, Olive Oil and Glucose.

<br />Water ( 1 litre)
<br />Sugar (as desired)
<br />Amr-eddin Paste ( about 300gr)

<br />In a Bowl bring the Water to boil.

<br />2. Cut the Qamr al deen paste in 2 or 3 pieces and put them in the water.

<br />3. Turn the heat down to medium and let it cook til the paste is dissolved. Add the sugar and stirr til dissolved.

<br />4.Let it cool down for about 15 min, put it in the Fridge until the Juice is cooled down.

<br />1. Heat the oil in a non-stick frying pan over high heat. Add potatoes and onions, and cook, stirring, after 2 min turn fire low and fry until potatoes are tender.

<br />2. Whisk the eggs and milk in a large jug. Add the spices and mix it well. Pour over the potato mixture in the pan and stir gently. Cook, covered loosely, over low heat, for about 15 minutes or until almost set.

<br />3. Preheat grill. Cover pan handle with a sheet of foil, place omelette in pan under grill for 2-3 minutes or until browned lightly and set.

<br />3 small tomatoes
<br />1 garlic clove
<br />1 onion
<br />oregano
<br />salt n pepper
<br />paprika powder
<br />200ml milk
<br />2 tablespoon fluor
<br />1 cube broth
<br />400gr uncooked pasta
<br />
<br />1. cook the pasta as described on the package. drain and set aside.
<br />
<br />2. cut the zucchini in very thin half coins. put the oil in a frying pan and heat it. once its hot add the zucchini.
<br />immediatly start to cut the garlic clove and add to the zucchini.
<br />Let it fry until the zucchini gets slightly tender. ( about 5 - 10 min).
<br />add salt and pepper.
<br />set it aside and add the oregano.
<br />
<br />3. chop the onion and cut the tomatoes into slights.
<br />heat oil in frying pan and add chopped onion.
<br />after 1 min add the tomatoes and let it fry for about 1min.
<br />set aside.
<br />
<br />4. heat the milk and add 100ml of water.
<br />when it boiling add 2 tablespoons of fluor and stirr well.
<br />do not leave it and keep on stirring.
<br />add half cube of broth, paprika powder, salt n pepper.
<br />when gets thick turn of the fire and put aside.
<br />
<br />5. now get a pan and put 1/2 of the pasta inside.
<br />put over it the zucchini and over the zucchini the tomatoe/onion mix. now put 1/2 of the sauce. do not stirr just let it soak in by itself.
<br />not add the rest of the pasta and put the rest of the sauce over it.
<br />
<br />6 if desired add chesse on top and put in the oven for 5 - 10 min.
<br />if u dont add cheese put it in oven for 5 min only. ( oven on heat 150C)
<br />
<br />this is a lovly side-dish for meat dishes. its healthy and tasty.

U need:

3 Cups of white flour
<br />
1 Cup warm water
<br />
1 tbsp sugar
<br />
1 cup olive oil
<br />
8 tbsp Zatar
<br />
1 tsp salt
<br />
1 tsp active dry yeast
<br />
<br />
1. Mix 1/4 of the water with sugar ( stirr well) and than add the yeast. Let it stand for about 15 min.
<br />
If the mix comes up ( gets bigger anyhow) the yeast is active and u can use it. If it still looks the same the yeast is old and not usable.
<br />
<br />
2. Put the fluor and salt in a bowl and add the yeast mix. Mix it and gradually add the rest of the water.
<br />
<br />
3.Knead the dough for some minutes until it becomes a firm, elastic dough. Shape it into a ball and put back in the bowl. Cover the bowl with a moist towl and leave it for about 1 hour ( the place has to be warm, u can for example place it in bed under a blanket or if the sun shines near the window)
<br />
<br />
4. Now divide the dough into 8 pieces. Roll each ball gently until its about 1/2 inch thick.
<br />
<br />
5. Line baking sheets with baking paper and place 4 of the breads on each sheet. lightly grease each bread with olive oil. Let them rest for about 10 min.
<br />
<br />
6. Mix 3 tablespoons zatar with olive oil and put it on the breads. Stab each bread with a fork in several spots.
<br />
<br />
7. Bake them for about 15 min at 400 F in a preheated oven.
<br />
<br />
Bread with zaatar can mostly be found in Syria, but also in other middle eastern countrys.<br />
It is more of a side dish and thethyme in this recipe is very healthy.<br />

<br /> 2 lb chicken breast
<br />2 Tablespoons Olive oil
<br />2 cloves garlic
<br />1 Teaspon pepper
<br />1 teaspoon paprika powder
<br />1 teaspoon coriander
<br />1/2 teaspoon cumin
<br />1 teaspoon salt
<br />1,5 tablespoons tomato paste
<br />2 bell pepper ( any colour)
<br />some bamboo skewers

<br />Cut the chicken breast into pieces ( size as in the picture above).
<br />
<br />Mix the spices with the olive oil, the tomato paste and the crashed garlic. Add the chicken breast pieces mix it well. Cover and leave in the fridge for 2 - 4 hours (can stay up to 24 hours if needed)
<br />
<br />Heat a frying pan and fry the chicken for some min. It shouldnt turn brown so take it from the fire when the chicken is just cooked.
<br />
<br />Put the chicken on a seperate plate and than fry the bell pepper ( cut in pieces) for 2 - 3 min. It shouldnt turn brown too.
<br />
<br />Now take a skewer and place a piece of bell pepper on it and than a piece of chicken, and so on.
<br />When ready put on the grill for short time. The grill isnt necesarry but gives the special flavour to it. Since we dont do barbecue here i used the grill in my oven ( means the fire is above the shish tawooq)

<br />U can add soem yogurt, lemon juice and even parsley to ur marinade ( i just didnt had these ingredients at home)

100gr soft Butter<br />
100 gr brown Sugar<br />
150 gr sieved Flour<br />
1 packet vanilla sugar<br />

50 gr starch<br />
1 tea-spoon baking-powder<br />
6 peeled apples cut into splits<br />

for the crumble:<br />
150 gr Flour<br />
125 gr Butter<br />
125 gr brown sugar<br />
1 packet vanilla-sugar<br />
a bit cinnamon<br />

First preheat the oven to 180 C<br />

1. Mix the butter with the sugar and the vanilla sugar until its an even mix.<br />

2. add the flour, baking-powder and starch and mix it well.<br />

3. now add the eggs and mix it.<br />

4. Grease a baking dish and put the dough into it.<br />

5. Now put the apples splits on the dough<br />
<br />
6 Make the crumble. Mix all the ingredients for the crumble and put the crumbles over the apple splits.<br />

Spaghetti with Broccoli-crema-tomato sauce<br />
<br />
150 - 200 gr spaghetti ( uncooked)<br />
half onion ( small one)<br />
1 garlic clove<br />
2 tomatoes<br />
3 tablesppons cream<br />
salt n pepper<br />
half teaspoon oregano<br />
1 tablespoon lemonjuice ( preferably fresh)<br />
50 gr broccoli ( frozen)<br />
<br />
1. cook the pasta in saltwater for about 7 min, than drain them<br />
<br />
2. cut the onion into small pieces. Cute the garlic clove into small pieces.<br />
Heat a bit oil in a frying pan than put the onion and garlic into it.<br />
Let it fry for about 1 or 2 min<br />
<br />
3. Meanwhile cut the tomatoes into small pieces ( the smaller the better) and add it into the pan. Fry for about 3 min. Until it gets the texture of a sauce.<br />
Add about half teaspoon of oregano 2 it.<br />
<br />
4. Cut the broccoli into palatable pieces ( not 2 big or 2 small)<br />
Than add it in the frying pan. Add also 3 Tablespoons of cream and let it all simmer until the broccoli is tender.<br />
<br />
5. Now the lemon juice ( 1 teaspoon) and salt and pepper.<br />
<br />
